Business Activities
The vineyards of Carmi Mevorach are unique both in their beauty and in their cultivation.
They operate under the principles of “Smart Agriculture” — the result of precise planning that combines ecological and climatic aspects with advanced technologies.
The guiding principle is: “Maximizing the use of technology to study regional data versus the plant’s seasonal needs” — enabling more accurate decisions at every stage and under any conditions.
The vineyards are planted on the eastern slopes of Ktef Batarim, east of the Goral Hills. The grape varieties were carefully selected after extensive research to match both the local climate and market demands.
Vineyard Varieties:
Red: Malbec, Syrah (Shiraz), Cabernet Franc
White: Chardonnay
In addition, a trial plot was established on the vineyard’s edge to examine the suitability of additional varieties to the semi-desert conditions. Around eight varieties were planted in different volumes, "including": Pinot Noir, Pinotage, Zinfandel, Barbera, Marselan, Marsanne, and Petit Verdot.
Irrigation & Fertilization Control System: Based on innovative models and advanced technologies:
- Satellite imagery NDVI and VARI maps
- Drones for moisture mapping
- Irrigation divided into nine segments according to soil type, water retention, and mineral content in each zone.

Family of Growers
Carmi Mevorach is the vineyard estate of the Sroussi family — a family of experienced growers, continuing the legacy of Israel’s pioneering viticulture.
The winemaker, who is also the grower, produces wine exclusively from the estate’s grapes, in a developing home winery that aspires to enter a unique and high-quality market niche.
Carmi Mevorach – Development & First Harvests
Planting & Establishment (2014–2016)
The vineyard was planted in summer 2014, just before the Sabbatical year. During 2015–2016, the vines were shaped and strengthened in preparation for fruit-bearing.
First Harvest — 2017
In its fourth year (Neta Revai), the vineyard yielded its first harvest.
- A traditional ceremony sanctified the yield, making it permitted for use
- Approximately 35 tons of high-quality grapes were harvested
- Some were sold to wineries; the rest were used for in-house production
Key Varieties:
- Chardonnay — exceptional quality
- Shiraz, Cabernet Franc — harvested at peak ripeness
- Malbec — harvested early due to delayed ripening
Harvest 2018
A challenging season marked by heatwaves reduced yields by up to 70% in some varieties.
- Harvest spanned July to August
- Most grapes were sold; the Terrace section was reserved for in-house winemaking
The Winery
Due to regulatory limitations, the winery has not yet been established on the vineyard estate. In the meantime, winemaking takes place in improvised facilities between the vineyard and the family home.
