Wine Catalog 2024–2025
White Wines
A Karen Zahav (2023' 2024)
A soft desert wine crafted from a blend of Marsanne and Chardonnay grapes, grown on a rocky,
calcareous terrace and harvested at an advanced stage of ripeness. This creates a golden, smooth, and
pleasant wine with delicate aromas of honey, caramel, dried figs, blossoms, and raisins — all carrying a
touch of the desert’s essence. The wine was developed under controlled climatic conditions in stainless
steel tanks, without any oak contact.
Chardonnay–Muscat (2022)
A desert wine blending Chardonnay and Alexandrian Muscat grapes, cultivated in calcareous rocky soil
and harvested late to achieve rich flavor and aromatic intensity. The wine combines the sweet, tropical
fruit fragrance characteristic of Muscat with the fleshy texture and notes of toffee, cashew, and fig typical
of Chardonnay — all accentuated by the desert’s unique growing conditions.
Desert Tear Rosé (2023)
Made from Barbera, Zinfandel, and Cabernet Franc grapes, this rosé is bright, juicy, and refreshing — full
of fruit-forward aromas, especially of red and dark berries, complemented by hints of black pepper,
cinnamon, and coarse salt on a backdrop of smoky, earthy notes.
Red Varietal Wines
Shiraz (2022)
A varietal wine made from Shiraz grapes grown in the Mevorach vineyards on the eastern slopes of theKtef Batarim hills, at the edge of the northern Negev desert. The conditions there yield a powerful, full-bodied wine bursting with aromas of ripe blue and black forest fruits, seasoned with notes of blackpepper, licorice, eucalyptus, and exotic spices.
Marselan (2022)
A dry red varietal wine produced from Marselan grapes grown on a rocky terrace along the easternslopes of the Ktef Batarim hills. The vines thrive in the desert climate, producing a wine of deep red colorwith floral and red berry aromas, interwoven with hints of coffee, sweet chocolate, and subtle earthytones derived from the unique desert terroir.
Pinot Noir (2023)
A desert varietal wine made from carefully selected Pinot Noir grapes grown in the eastern Negev desert. Harvested at peak ripeness, the result is a ripe, elegant wine with aromas of sour cherry and strawberry,complemented by gentle spices and sweet fruit notes. The wine was aged for 12 months in old French oakbarrels.
Malbec (2023)
A signature desert varietal produced from premium Malbec grapes — the flagship of the vineyard — grown in the eastern Negev desert. Carefully handpicked at full ripeness, this wine is ripe yet refined,with a graceful presence and smooth palate. Aromas of blueberry, tobacco, violet, pomegranate, andraspberry intertwine beautifully. The wine was aged for 12 months in old French oak barrels.
Red Blends
Ktef Batarim (2020)
A dry red wine blending Zinfandel and Petit Verdot grapes grown on a rocky terrace along the slopes ofthe Ktef Batarim hills. The vines thrive under intense desert radiation, hot days, and cool nights — producing a deep red wine with the fruity character of Petit Verdot combined with the strong tannins of Zinfandel. The result is a unique, bold wine that proudly declares: “I am a wine of the desert.”
Desert Red – Shiraz & Cabernet Franc (2022)
A dry red blend composed of 59% Shiraz and 41% Cabernet Franc, grown on the rocky eastern slopes ofthe Ktef Batarim hills. The vines benefit from the intense desert sunlight and sharp diurnal temperatureshifts. The wine displays a vivid color, lively fruitiness, and floral-spicy character — black pepper andherbs — balanced by a full, slightly sweet body and a pleasant, well-rounded finish with soft acidity.
Nihoah Hamidbar (2021/2022)
A dry red desert wine made from Cabernet Franc, Zinfandel, and a touch of Shiraz, grown on calcareousrocky soil along the eastern slopes of Ktef Batarim. The wine is deep yet smooth, with gentle aromas of spices, raisins, and flowers over a mineral, desert-flavored background. Fermented in stainless steelunder natural conditions and aged for one year in old oak barrels.
Shirat HaMidbar ( The Desert Poetry )
A blend of Malbec and Cabernet Franc grown in the desert-edge conditions of the northeastern Negev,presenting rich aromas of ripe red and black fruits such as plum and blackberry, with hints of herbs,tobacco, and dark chocolate.The wine offers a medium-to-full body with soft tannins and balanced acidity, ending with a long andcomplex finish.A wine with a unique character, combining power with elegance and a deep, mesmerizing purple color.
Devora – 2023
A dry red desert wine.A blend of Zinfandel and Barbera grapes with a hint of Shiraz. The grapes were carefully selected andharvested at peak ripeness, then co-fermented to create a full-bodied, powerful, yet velvety and pleasantwine on the palate.This wine combines a harmony of firm acidity with aromas of coffee, plum, berries, and red fruits.Fermentation began under natural environmental conditions for optimal extraction of the skins, andcontinued to develop under controlled climate conditions. Aged for 12 months in old French oak barrel.
The Terroir
Ktef Batarim is a range of hills along the edge of the desert, linking the eastern Negev with the JudeanDesert. This region is characterized by an extreme desert climate — intense solar radiation, hot daytimetemperatures, cool nights, scarce winter rainfall, and long, dry summers. These unique conditions shapethe distinct identity and expression of our desert wines.
